DAY TWO

 
So- do you want a "normal" meal... do you want to feel "normal" like you are eating at Tony Roma's and your food is delicious and you aren't even considering what is in it because it MUST be bad if this tastes so good....

This is it.

Introducing Whole 30 BBQ Ribs.

Ingredients:

2-3 lbs of pork ribs*
Salt & Pepper

FIRST- the sauce.

- 15 oz. Tomato Sauce
- 4 oz. Tomato paste
- 1/4 c. Coconut Aminos
- 1/4 c. Balsamic Vinegar
- 1/4 c. Orange Juice (I used one orange)
- 2T Apple cider vinegar
- 4 pitted Medjool dates (soaked in warm water then drained)**
- 1 tsp of each
         salt
         smoked paprika
         chili powder
         garlic powder
         onion powder
         dijon mustard
1/2 tsp of each
         cayenne pepper
         black pepper
         cinnamon

Bring all ingredients to med-hi heat, then simmer on low for ten minutes. Sauce will keep in fridge for up to a week.

*I used boneless ribs, which took an hour off cooking time. Bone-in ribs will take a good 3-4 hours. 
**I mashed the dates up in the water and added about 2T of that sweet water to the sauce. That way I didn't need to emulsify or blend.

Directions:

1. Preheat Oven to 275. Line a baking dish with foil.
2. Season the ribs with salt and pepper.
3. Place the ribs fat side down in the dish and cover tightly with foil.
4. Slow bake in the over for 3-4 hours or until juices run clear.
5. To finish, smother ribs in some of the BBQ sauce then broil for 3-5 more minutes.
6. Serve with a pile of green veggies.
